study break

Image
People showing competence in self-regulation have, among other things adaptability. I think I'm quite good at reading emotional currents but not influence. The kind of very applicable stuff that I've been studying for 3 days straight. It's so utterly common sense that one gets dreary from studying.  So I decided that I shall post trivial things like the recipes I have adapted- learnt that to relieve stress, do something different to treat yourself.  (N.B. By no means am I downplaying the importance of studying all these; negotiation and conflict resolution sounds like stuff we pick up but are actually skills that need to be honed. Really love how social work modules spur self reflection and that what is taught is so congruent to how I think the world should work.) Black bottom Orange cupcakes

Image
I have this urge to just fill this line with smileys. These cupcakes are like my first creations! I'm always thinking of new stuff to make, but this is one of the rare times where I decided to just bake and see instead of theorising whether it will be a flop. Essentially, I made a firm chocolate dough and pressed it down at the bottom, then baked it for 5 minutes before plopping the orange batter in. Orange-speckled beauties. The zesty orange flavour didn't come through as strongly as I hoped, perhaps adding orange essence or a dash of Cointreau might help.. You can dress them up easily by making orange flavoured icing with orange juice. After shaping the cookies for baking I was so tired that all I wanted was to lie down and close my eyes. So they are just plain ol' cupcakes sitting snugly together now. The cookie dough left over can be easily rolled out and shaped. Testimony to this: Look at how teeny-weeny those alphabets are! You counting the times LOVE i...

clouds and choc cupcakes

Image
I do weird things in the bathroom. Like taking a blob of shampoo suds (is that what you call it?) and smearing it on my lips. And then imagining that this is what clouds feel like. And imagining how one day I might really be able to create something edible with this. Soap suds taste horrible by the way. THIS. No kidding, this has the texture of clouds, or at least in my imagination. If not for those fluffy things on top, I would have passed posting it, because the cupcakes need more chocolaty oomph. clouds and choc cupcakes   Makes 24 cupcakes plus 4 mini ones (picture below) I only made 12 with clouds because I wasn't sure how things would turn out. 3/4 cup (175g) unsalted butter, diced 1/2 cup plus 2 tablespoons brown sugar 2 large eggs, separated 1/4 cup plus 2 tablespoons milk 2 heaped tablespoons cocoa powder, mixed with 1/4 cup plus 2 tablespoons boiling water then cooled 1 cup cake flour 2 teaspoons baking powder For the meringue: 2...

Compromises

Image
From Gorgeous Cakes by Annie Bell When at crossroads and your heart is beckoning you to head to one of them but your mind, plus family and friends scream the other way, what do you do? Compromise? Follow your heart, but at the same time not knowing whether it would turn on you? Would the next best be as sweet and somewhat satisfactory as this time round? This little dame looks somewhat ugly but she still had me eating 3 while decorating the batch. Yum. They are all gone now. Sorry if you make no sense of what I'm saying. Sometimes my mind is not lucid. Can I attempt to explain  make people understand? Being good in studies and constantly topping the class does not mean that one is fit for Junior College. For some reason I particularly DREAD JC. Call me juniocollego- phobic, whatever. Anyway, I mind is in a mess cos I just told my parents I wanna go to a baking or culinary arts course in polytechnic, and not surprisingly (but caught me unprepared nonetheless) caused a coll...
